Well, Duck, I guess maybe you were the only one to get the goodies,cuz no one that asked for a letter had no response.
The bunny stopped next door at dads and brought a fabulous half-price sale prime rib, so that was our no candy Easter, and of course I told you all about our Good Friday lasagna rollups-no red sauce(it bothers us)so I mixed up ground chicken, ricotta cheese, shredded mozzarella, grated cheese, one egg, all items were raw, then made a 4 cheese white sauce, instead of the typical red, and of course spices to taste-for us it would be garlic and more garlic and italian spices. you cook the noodles, let them cool, then put a heaping tablespoon of filling into each and it should make 15,
1/2 lb.raw ground chicken, 1 and 1/2 cups grated cheese, almost a pint of ricott cheese and spices. The cheese sauce is a simple medium white sauce,make a rue of 2 tbsps marg and flour andstir in one cup whole milk stir,stir,stir-it will get thick like pudding then add 2 cups of 4 cheese italian blend shredded cheese.Put a good heaping tablespoon on each noodle then roll each.Bake in a true 350 degree oven for at least 46 minutes(covered) then uncovered for 15.ENJOY!!

Thanks kat, for the recipe it sounds totally delicious. We had a microwave ribs and applesauce. we eat sort of on the light side. Nothing real fancy and we listened to Old Tyme Radio Hour while enjoying our family time.

As for our eating habits, that was way over what we usually have-lots of salads, chicken or tuna,otherwise we wouldn't be our correct weight-me 115 and Jay at 160.
But we both lost 25 pounds by not eating ice cream, cookies, brownies, cake, candy,etc.

That's great , kat, you and your son found out what else your allergic too.

In my family's Hereditary history we're allergic to Acid Fruits ( including Tomatoes) and I'm allergic to some root vegetables, and melons. We're mostly vegetarians but on a very rare occasion we'll have a hamburger, if someone stops by McDonald's or one of those places . We don't turn our collective noses up at free food unless it is something we really , and truly can't eat. Smile
